I own an APO 1. 0 as well, and the 2. 0 is a huge upgrade. Much better control interface and condensate control. I absolutely love my APOs and highly recommend to every cooking nerd. I've learned so much about cooking conceptually, stepped up my bread game and use fewer plastic bags for sous vide.

After a few tries I figured out how to seal the pork roast.

Just one thing; please don't use Purolator. I've seldom had a good experience with them. For instance, I ordered a 16 Litre Container, an Insulating Cover and some Vacuum Sealer Rolls. They didn't deliver the 16 Litre Container. I had to register a complaint to make them notice the discrepancy AND get you involved to make them fix the problem. Puro sucks!
