I have long lived in Finland, and until recently, I never could find vanilla extract. They use vanilla sugar here, but I missed my extract. I've been making my own for many years. The color has always been very light, so when I heard that using the dried pod splits and cuts worked better, I decided to try it out. They were delivered to my friend in April, but I just finally got a shipment of things from her now, in mid-July. In just 2 days, the extract I started in crazy dark. I am really excited, and hoping that the vanilla flavor will be that intense, too! I'm going to need to bake a bunch and use up what I already made before this new batch is ready. In the photo you can see how light the extract I started almost 2 years ago is (on the right), vs the Gneiss vanilla extract started 2 days ago (on the left).
