I smoked this brisket on the weekend and the results were superb! First of all, the cut of meat was excellent, a very good quality large brisket with lots of meat and a reasonable amount of excess fat that needed to be trimmed, perfect for wagyu tallow! I smoked it for 12 hours seasoned with salt and pepper (wrapped for 9) and then rested for 3… the Wagyu fat added the most super beefy, buttery, moisture throughout the brisket and the family absolutely loved it! Would definitely buy this range of beef again!!!
