I'm still trying to see how to best use this granulated honey. I thought that it would dissolve well in liquids, and I had planned to use it in cocktails. But it is not very soluble in cold liquids and likely needs to be slightly heated. So I'm still experimenting with its use.

The Tahiti vanilla beans were DRY and snapped into pieces. The Madagascar beans were fine. That in was an expensive lesson.
