I finally decided to spend the money on a SRF brisket! Went all out even bought fresh salt and hand ground fresh pepper. The best wood I could get my hands on and planned an all night cook. Stayed up with it and didn’t even have the slightest variation in temp! Disappointed is an understatement, the point was almost unusable and the flat only rendered about 6-7 good slices. Not what I expected at all from a 14. 4 pound wagyu brisket.
