The Essential 3. 5qt pan with curved sides is perfect for whisking sauces and for making béchamel. The rounded sides fit exactly the shape of a wire whip (un fouet). The pan also heats evenly and has great balance. This is a well-engineered and manufactured utensil.

My plan was to visit your store there and purchase some of your items. I could not drive down to Napa because of time constraints. I really wanted to see all the products first hand.
